This Week in Veggies – What’s Fresh at Your Local Farmers Market

This is the third year we’ve been a part of the Westfield CSA (community supported agriculture) group.  Since our farmer also delivers to a few local farmers markets, we think his shares are pretty representative of what other organic farmers will be bringing to their markets this week.

Check out what we got this week so you can see what your farmers will have this weekend!

This week we got salad turnips, fan squash, dandelion greens, rosemary, mustard greens and cabbage.

Summer Squash Patties (from about.com)

2 cups grated yellow squash

1/4 cup self – rising flour

1/3 cup self – rising cornmeal

1 small onion, chopped

1 egg, beaten

pepper to taste

 

Preparation:

Mix all ingredients together. Spoon out into hot greased frying pan (I use olive oil). Brown both sides. Drain on paper towel.
