This Week in Veggies – What’s Fresh at Your Local Farmers Market

This is the third year we’ve been a part of the Westfield CSA (community supported agriculture) group. Since our farmer also delivers to a few local farmers markets, we think his shares are pretty representative of what other organic farmers will be bringing to their markets this week.

This week we got summer squash, tomatoes, peppers, eggplant, savoy cabbage, onions, potatoes, dandelion greens and parsley. We got so much food that we even gave some away: beets, green beans and a melon.

If you’ve never tried dandelion greens they are a lightly bitter green that can be eaten raw or cooked. They can be enjoyed in a salad or sauteed with garlic and onions and can even be used as a spinach substitute in your favorite recipe.

So get out to your local farmer’s market and try something new this week.
