National Pie Day is today so it is your national duty to help yourself to a big slice of your favorite pie. Cakes have cornered the birthday market, everyone loves cookies, and cupcakes were the hip sweet treat the past few years. However good ole pie takes a backseat to no dessert. We all have our favorites. I like apple, pumpkin, and cherry (readers of YDKJ know I am a big Twin Peaks fan).
One of my all time favorite pies is Key Lime. I frequently ask Alice to make this for a weekend dessert. Here is one of our favorite recipes from www.recipesource.com;
KEY LIME PIE (CHEESECAKE)
———————–FOR THE CRUST———————–
2 c Graham cracker crumbs
2 tb Sugar
1/2 c (1 stick) butter [melted & cooled]
———————-FOR THE FILLING———————-
8 oz Cream cheese [softened]
15 oz Sweetened condensed milk
1/3 c Key lime juice
1/8 ts Lime oil (optional but good]
1 c Sour cream
To prepare the crust…
1) Combine all of the crust ingredients and
press into a 9″ pie pan or spring form pan. Bake @
350o for about 20 min. or `til nicely golden brown,
then set aside to cool…
To make the filling…
2) In a medium size bowl, thoroughly mix
together the cream cheese and the milk, then blend in
the Key lime juice and lime oil (if used)…
3) Beat in the sour cream and mix `til smooth,
pour into the prepared crust and refrigerate for at
least 2 hours before serving…
